(Borago officinalis)
Edibility
Ornamental, medicinal, edible.
Bees love the countless borage flowers and the leaves taste like cucumber.
Leaves and flowers are edible. The flowers will brighten any salad, dessert or drink since they are very pretty. The flavor is mild, so it can be used in both savory and sweet. Thinly chopped leaves can be eaten raw or cooked, and the gentle borage flowers are oooh-so-pretty in salads and as candied or raw dessert decorations.

Medicinal uses
Seed oil or borage tea is used for medicinal purposes. Borage is used to treat cough, cold, inflammation, PMS and skin problems.
Borage contains many minerals (iron, potassium, magnesium among others) and vitamins that are important for our functioning.
It is not recommended to consume borage in excess since it contains certain compounds that can be toxic to the liver.
