Three-cornered leek

Oh, this is a gem! Do you want a combo of garlic/onion/leek/spring onion? Well, here you have it all in one plant!

Both the English name and the specific epithet triquetrum refer to the three-cornered shape of the flower stalks. A cross-section looks like a three-corner star, fragile and perfect (you can see it in the photo – three-cornered leek is the one with white flowers and fleshy stems).

All parts of the plant, from the bulb to the flowers, are edible fresh or cooked. The flavour is a mix of spring onion and garlic, but more subtle. Use it in pestos, soups, stews; pickle or ferment the bulbs and the stalks. The flowers look very decorative in salads or any other dish and their garlicky flavour is very mild, so don´t hesitate to add some.
